In 2017, Tonic were engaged by The Arts Council of Wales to implement a Resilience Programme across multiple arts centres, to help prepare and protect them from continued future Arts funding cuts.

At Galeri Arts Centre in Caernarfon, we reviewed all elements of catering and operational procedures. Following an in-depth examination of current income and profitability, we analysed and compared local, competitive markets before establishing a detailed understanding of the demographic of its customers and their expectations.

We recommended a move away from an intended fine-dining menu towards a simpler, contemporary Café style, focusing on high quality, local ingredients.                                          

Our work in developing a new menu and staff training has led to a clear improvement in operational efficiency and sales growth with a net loss in the Café and Bar of £120k in 2017 converting to a net profit of £60k in 2018.
